Everyday Overnight Oats

I must eat oats for breakfast almost everyday and this is my go-to recipe for quick and delicious oats every time. I usually make these in the evening and refrigerate them overnight until breakfast. I have never been a morning person, especially without coffee, but taking time to enjoy a good breakfast can really make a difference to the outcome of my day. Making this recipe ahead of time means I can enjoy a little more relaxation in the morning and take time to savour my precious morning coffee.

This recipe is extremely easy to adjust, simply add any flavourings you feel like the next day. I like mine with fresh slices of banana or fresh fruit and granola on top to add a crunchy texture. However, this recipe also works very well with peanut or almond butter and even cacao! Easily replace oat milk with soy, almond, rice and coconut- whichever you have to hand. I think adding banana creates a creamy texture but adding berries in replacement also works well. For an extra protein kick add chia or flax seeds before refrigerating to enhance the nutritional content further.

Banana & Cinnamon Overnight Oats

serves 2

Ingredients:

130-140g Rolled Oats

2 Medium-sized Bananas, Ripe

1 tsp. Cinnamon powder

250ml Plant Milk (my favourite for this recipe is oat milk)

Method:

  • In a bowl, mash the ripe bananas with a fork.
  • Add the oats, cinnamon and plant milk to the banana and mix until combined.
  • Cover the bowl of oats and refrigerate over night.
  • Next morning, remove the oats from the fridge and stir. If you are in a rush or prefer your oats cold, add preferred toppings and enjoy! Alternatively, place oats in a medium saucepan, add a splash of water and place on a medium heat. Stir the oats regularly until they are thick, creamy and warm.
  • Remove from the heat, top with slices of banana, granola, a splash more of milk and a dash of cinnamon. Enjoy!
  • You can also heat your oats in the microwave for 2 minutes, stir then another 2 minutes until desired thickness is reached for a quicker method.

Note:

If you’re looking for a lighter breakfast, find this recipe too creamy or simply want to save your oat milk for another recipe, you can adjust the liquid to all water, or half water and half milk. Everyone has different tastes and interests with their diet thus adjusting to your own personal preference is necessary.
